Very big weekend in Byron Bay.  It's "A Taste of Byron" over two days this year, next to the surf club on Main Beach.  Saturday is the Byron Bay Chilli Festival, with an excellent range of chilli companies attending from right around the country.  Hot sauces, prepared food, margaritas, beer, wine, dancing, live music, comedy, kids entertainment and the beach will all add up to an outstanding day.  Hope to see you there.


Sunday will be "Signature Dish Sunday", a competition held between restaurants for the most interesting dish, plus all of the above and more.


I am on the run today, but wanted to share with you a delicious burrito recipe borrowed from our recently opened takeaway restaurant, OzyMex, in Byron Bay.  We've named it OzyMex,  Oz y Mex (the "y" in Spanish means "and") because it is a fusion of all the good flavours we enjoy here, blended with traditional Mexican favourites- Tacos, Nachos, Burritos, Tortas and Quesadillas.


The "OzyMex Burrito" combines our Fiery Coconut Chilli Sauce (Thai inspired), with a Mexican Burrito.  The result is neither...it is OzyMex... and it is delicious.


Heat a large flour tortilla so it is warm, but still flexible.  Lay about 1/3 cup pinto or borlotti beans on top, sprinkle with shredded tasty cheese, lay on a tablespoon or so of Byron Bay Fiery Coconut Chilli Sauce, add some chopped or shredded beef (about 1/3 cup), a bit of sour cream if you like and top it off with shredded cabbage, chopped coriander and a wisp of chopped red onion.


Fold over the bottom and roll the whole thing together.  Devour and enjoy something totally new to your tastebuds.
