Today's recipe is a BBCC icon, one of the first recipes we published, and in my mind one of the best.  Great Winter food, served with mashed potatoes, butter and your favourite chilli sauce.  Make lots, so you can have leftovers rolled up in a tortilla the next day.  Makes a great burrito for breakfast, or a roll with salad for lunch....


Meat Loaf With A Twist

 

Spicy meatloaf that will change your life! 

 

1 kg beef mince

3/4 cup chopped onion

1/2 cup finely chopped carrot

1/4 cup chopped celery

1/4 cup chopped red capsicum

1/4 cup chopped green capsicum

3 Tbs butter

2 tsp minced garlic

3 eggs beaten

1 cup fresh breadcrumbs

1/2 cup milk

bottle of BBCC Smokin Mango CHILLI Sauce w/ Chipotles

salt and pepper 

 


Melt butter in a pan.

Saute onion, carrot, celery, capsicum and garlic, stirring often,

for about ten minutes until tender.

Set aside.

Beat 3 eggs until blended, add breadcrumbs and milk, sirring lightly.

Put mince in a large mixing bowl, adding cooked vegetables,

egg mixture and about half a bottle of BBCC Smokin' Mango CHILLI Sauce.

Add salt and pepper. Knead mixture lightly. Place mixture in an oiled

baking dish and pat into a loaf shape.

Spread top with 1/4 to 1/2 cup BBCC Smokin' Mango CHILLI Sauce.

Bake at 180 degrees for 35-40 minutes, or until done.

Serves 8-10 

 


Chipotles are smoked jalapenos, which give our sauce a rich, smoky note.
