I know what we will be having for our barby on Sunday....
Here's a holiday recipe for one of my favourites... FISH TACOS.
Following is our own recipe using BBCC's new Green Jalapeno Chilli Sauce w/ Coriander. In addition to jalapenos and coriander (cilantro), we add mango, coconut, cumin seeds and lime, to make this a heavenly taste combination.
BYRON BAY CHILLI FISH TACOS
INGREDIENTS:
soft corn or flour tortillas (at least two to three per person)
boneless fillets of a firm fleshed fish (at least one per person)
olive oil and lime or lemon marinade
numerous bottles of BBCC GREEN JALAPENO CHILLI SAUCE
a bit of finely chopped green onion
some fresh coriander, finely chopped
sliced onion and or capsicum
plain yogurt or sour cream
real mayonnaise
sliced fresh cabbage or lettuce
more bottles of BBCC CHILLI SAUCE, RED CAYENNE OR SPICY SWEET ARE BOTH GREAT TOO WITH FISH TACOS.
METHOD:
cut the fish into nice chunks, about 40mm
marinate in a mixture of olive oil and lime or lemon juice combined with BBCC GREEN JALAPENO CHILLI SAUCE to taste. two hours is long enough.
make up a creamy sauce ahead of time using half real mayonnaise, half plain yogurt or sour cream, combined with BBCC GREEN JALAPENO CHILLI SAUCE to taste.
cook the onion and capsicum on your griddle and keep warm.
tortillas need only to be warm, and should stay soft. you can wrap them in alfoil and place on the griddle, or warm them as they are served, placing directly on the heat and turning quickly. I like em slightly singed, but soft.
cook the fish and you are ready to fill the tacos.
place the tortillas on a plate or flat surface, and start building. I usually start with a few chunks of fish, then a drizzle of the creamy sauce, then some onion, then some chilli sauce, (sweet, green or red), then some fresh, crisp cabbage or lettuce. make a small fold along the bottom edge of the tortilla, then close from both the sides, creating a little parcel that won't drip out the bottom.
Besides the scrumptious taste, they are really easy to hold and eat in hand. I still love sausage sangers (with a drizzle of Smokin Mango Chilli Sauce, of course), but fish tacos are a nice alternative.
Remember to use soft flour or corn tortillas, the hard shell ones are just not the same.
EAT IT UP, THEN MAKE ANOTHER. YUMMM

grated tasty cheese
sliced avocado or guacamole
extra BBCC CHILLI SAUCE OR SALSA
OH YEAH, AND DON'T FORGET THE CORN CHIPS AND SALSA EITHER

These new sauces are the masterpieces of my good friend Ashif, who at this moment is off in Los Angeles promoting them at the Australia Week festivities there. These are quite seriously, some of the tastiest chilli sauces on the entire planet. I can say that, because travelling from show to show over the last few years, I have sampled 99% of the world's best.
