MEAT LOAF WITH A TWIST

 

Spicy meatloaf that will change your life! 
 
1 kg beef mince
3/4 cup chopped onion
1/2 cup finely chopped carrot
1/4 cup chopped celery
1/4 cup chopped red capsicum
1/4 cup chopped green capsicum
3 Tbs butter
2 tsp minced garlic
3 eggs beaten
1 cup fresh breadcrumbs
1/2 cup milk
bottle of BBCC Smokin Mango CHILLI Sauce w/ Chipotles
salt and pepper
 

Melt butter in a pan.
Saute onion, carrot, celery, capsicum and garlic, stirring often,
for about ten minutes until tender.
Set aside.
Beat 3 eggs until blended, add breadcrumbs and milk, sirring lightly.
Put mince in a large mixing bowl, adding cooked vegetables,
egg mixture and about half a bottle of BBCC Smokin' Mango CHILLI Sauce.
Add salt and pepper. Knead mixture lightly. Place mixture in an oiled
baking dish and pat into a loaf shape.
Spread top with 1/4 to 1/2 cup BBCC Smokin' Mango CHILLI Sauce.
Bake at 180 degrees for 35-40 minutes, or until done.
Serves 8-10
 

Chipotles are smoked jalapenos, which give our sauce a rich, smoky note.
