THE SAUCE
125g butter
3 egg yolks
2 tablespoons lemon or lime juice
¼ teaspoon salt
2 tablespoons Green Jalapeno Chilli Sauce
2 tablespoons finely chopped coriander

THE EGGS BENEDICT
4 bagels, split and toasted
8 poached eggs
Smoked salmon or cooked bacon
Jalapeno Hollandaise Sauce

THE SAUCE
Heat butter until just beginning to bubble.

Put the egg yolks, citrus juice and salt into a blender combine. While the machine is running, slowly pour in the butter and blend until sauce is thickened, about 15 seconds.

Add chilli sauce and coriander and blend for 5 seconds. Serve immediately over eggs or vegetables or... keep warm in a sealed thermos until ready to use.
Makes ¾ cup

THE EGGS BENEDICT
For each serving, place 2 bagels on a plate and layer with salmon or bacon, a poached egg on each bagel and spoon hollandaise sauce over the top.

Spinach or avocado would also be delicious in place of the fish or meat.

Garnish with additional chopped coriander.
