ingredients
4 tablespoons butter
2 tablespoons brown sugar
6 tablespoons caster sugar
2 tablespoons BBCC HEAVENLY HABANERO CHILLI SAUCE
2 tablespoons apple juice
3 tablespoons brandy
2 tablespoons cream
makes 1½ cups
cooking instructions
Melt butter in a saucepan and stir in brown and caster sugars. Pour the chilli sauce through a sieve into the pan and add remaining ingredients, stirring continuously while mixture comes to a boil. Reduce heat and cook for 4 minutes. Remove from heat and serve warm over cheesecake.

Sauce will keep for a week refrigerated.
variations
Add ½ cup chopped toasted macadamias or pecans to the sauce just before serving.
serving idea
Place a scoop of vanilla ice cream on a slice of Madeira cake and pour sauce (with or without nuts) over the top.
