jalapeno corn fritters


2 cups corn kernels
2 eggs
2 spring onions, sliced
1-2 fresh jalapeno chillis, minced (optional)
1 garlic clove, minced
2 tablespoons chopped coriander
2 teaspoons salt
½ cup flour
½ cup polenta or cornmeal
½ teaspoon baking powder
½ cup BYRON BAY CHILLI CO Green Jalapeno Chilli Sauce
vegetable oil
cooking instructions
Place all ingredients except vegetable oil in a processor and blend until just combined. Transfer to a bowl and allow mixture to sit for 1 hour.

Heat ½” vegetable oil in a fry pan over medium heat until oil appears hot.

Make round patties of fritter mixture by using an ice cream scoop. Place scooped mixture in hot oil and flatten with the back of a spoon.

Fry a few at a time until golden brown on both sides. Remove to a baking tray lined with paper towels and finish frying remaining batter.

Place tray of fritters in a 180º oven for 10 minutes to finish cooking all the way through. Serve hot with additional Jalapeno Chilli Sauce and a salsa of your choice.
