Hot Fudge Sauce
2/3 cup cream
½ cup golden syrup
1/3 cup brown sugar
¼ cup cocoa powder...
¼ teaspoon salt
200g dark chocolate
2 tablespoons butter
1 teaspoon vanilla essence
1 tablespoon Byron Bay Chilli Company Heavenly Habanero Chilli Sauce

In a saucepan, combine cream, golden syrup, brown sugar, cocoa and salt. Cook over low heat and gradually whisk in chocolate in small pieces until melted. Turn up the heat to medium and allow to simmer for approximately 5 minutes or until sauce begins to thicken. Remove from heat and whisk in butter, vanilla and chilli sauce. Serve hot or at room temperature over ice cream or other desserts.

½ cup sugar
2 tablespoons water
¼ cup slivered almonds
1 red chilli, finely chopped

Combine sugar and water in a saucepan and, over medium heat, allow to cook until mixture turns golden. Quickly stir in almonds and chilli (you can include the seeds, if you like). Pour the mixture on a baking sheet lined with baking paper. Allow to cool completely and then break into shards. Store in an airtight container away from moisture. Serve as a garnish for an ice cream sundae. Praline can also be chopped coarsely or finely to sprinkle on an iced cake or cupcakes.
